Nonna's Penne Pasta with Sausage and Tomatoes Italian Food Recipe: Revision

I am celebrating my oldest sister's birthday today with some delicious authentic Italian food from my Italian Great Grandmother's secret recipe collection consisting of homemade Italian sausage and homegrown garden tomatoes, oregano, garlic, green pepper, Italian seasoning, ricotta cheese, etc. Here is
the recipe, shhh, don't tell my Nonna I shared her secret recipe tips!:

Nonna's Penne pasta with sausage and tomatoes Ingredients:

2 cups uncooked penne pasta, I use the Barilla brand
1 pound traditional Italian Sausage, links cut into bite-size pieces or ground meat.
1 large onion, halved and sliced
1 medium green pepper, sliced
1 tablespoon vegetable oil
3 large Culantro leaves, chopped (NOT cilantro!)
2 teaspoons garlic powder or 1/2 chopped fresh garlic
1/1/2 tablespoon Italian seasoning
1-1/2 teaspoons dried basil
3 Tablespoons dried oregano or fresh oregano leaves, minced
1 teaspoon Italian Sea Salt
1/2 teaspoon black pepper
3 large fresh very red and ripe tomatoes (cut up).
1 pound ricotta cheese, cubed into bite-sized pieces
Grated Parmesan cheese, optional
Grated mozzarella cheese, optional

Nonna's Penne pasta with sausage and tomatoes directions:

In a medium-large cooking pot, cook the Italian sausage, onion and green pepper in the oil
over medium heat until the sausage is no longer pink and the vegetables are tender. Add
the tomatoes and all of the herbs and seasonings; heat thoroughly and then add 2 cups of
water. Cover and heat to a full rapid boil; stir and then let the mixture boil for about
3-5 minutes.

Add the Penne pasta and give a quick stir. Cook until the pasta is almost
tender, and gradually begin adding the bite-sized cubes of ricotta cheese into the mixture
1-2 at a time. Cover for 2 minutes. After that, remove from heat and uncover until it
thickens a bit. Stir once, and continue letting it thicken while releasing some steam.

After approx. 3-5 minutes, serve and top servings with grated Parmesan and mozzarella
cheeses, if desired. Most authentic traditional old world authentic Italian recipes also say to always serve with garlic bread!
